Hong's Restaurant, located within the prestigious InterContinental Chiang Mai The Mae Ping, is seeking a talented and experienced Sous Chef to lead our Chinese cuisine team. The ideal candidate will have a passion for Chinese culinary traditions, a strong background in Chinese cuisine, and a proven track record of delivering exceptional dining experiences.
Key Responsibilities:
- Menu Development and Execution: Collaborate with the Executive Chef to develop and execute innovative and authentic Chinese cuisine menus that meet the highest standards of quality and taste.
- Kitchen Management: Oversee the day-to-day operations of the Chinese cuisine kitchen, including food preparation, cooking, and plating. Ensure that all dishes are prepared and presented according to established recipes and standards.
- Team Leadership: Lead and mentor the Chinese cuisine team, including chefs, cooks, and kitchen staff. Provide guidance, training, and support to ensure that all team members perform at their best.
- Quality Control: Maintain strict quality control measures to ensure that all dishes meet the highest standards of taste, presentation, and food safety. Conduct regular inspections and audits to identify areas for improvement.
- Cost Management: Manage food costs and inventory levels to ensure that the Chinese cuisine kitchen operates within budget. Implement cost-saving measures and strategies to maximize profitability.
- Customer Satisfaction: Work closely with the front-of-house team to ensure that all guest needs and preferences are met. Respond promptly to guest feedback and complaints, and take appropriate action to resolve any issues.
- Compliance: Ensure that all kitchen operations comply with local health and safety regulations, as well as company policies and procedures. Maintain accurate records and documentation as required.
Qualifications:
- Proven experience as a Sous Chef or similar role, with a focus on Chinese cuisine.
- Strong knowledge of Chinese culinary traditions, ingredients, and cooking techniques.
- Excellent leadership and communication skills.
- Ability to work effectively in a fast-paced, high-pressure environment.
- Strong attention to detail and a passion for delivering exceptional dining experiences.
- Culinary degree or equivalent certification preferred.
