Job Description

Hong's Restaurant, located within the prestigious InterContinental Chiang Mai The Mae Ping, is seeking a talented and experienced Sous Chef to lead our Chinese cuisine team. The ideal candidate will have a passion for Chinese culinary traditions, a strong background in Chinese cuisine, and a proven track record of delivering exceptional dining experiences.

Key Responsibilities:

  1. Menu Development and Execution: Collaborate with the Executive Chef to develop and execute innovative and authentic Chinese cuisine menus that meet the highest standards of quality and taste.
  2. Kitchen Management: Oversee the day-to-day operations of the Chinese cuisine kitchen, including food preparation, cooking, and plating. Ensure that all dishes are prepared and presented according to established recipes and standards.
  3. Team Leadership: Lead and mentor the Chinese cuisine team, including chefs, cooks, and kitchen staff. Provide guidance, training, and support to ensure that all team members perform at their best.
  4. Quality Control: Maintain strict quality control measures to ensure that all dishes meet the highest standards of taste, presentation, and food safety. Conduct regular inspections and audits to identify areas for improvement.
  5. Cost Management: Manage food costs and inventory levels to ensure that the Chinese cuisine kitchen operates within budget. Implement cost-saving measures and strategies to maximize profitability.
  6. Customer Satisfaction: Work closely with the front-of-house team to ensure that all guest needs and preferences are met. Respond promptly to guest feedback and complaints, and take appropriate action to resolve any issues.
  7. Compliance: Ensure that all kitchen operations comply with local health and safety regulations, as well as company policies and procedures. Maintain accurate records and documentation as required.

Qualifications:

  • Proven experience as a Sous Chef or similar role, with a focus on Chinese cuisine.
  • Strong knowledge of Chinese culinary traditions, ingredients, and cooking techniques.
  • Excellent leadership and communication skills.
  • Ability to work effectively in a fast-paced, high-pressure environment.
  • Strong attention to detail and a passion for delivering exceptional dining experiences.
  • Culinary degree or equivalent certification preferred.
